As the weather warms, our thoughts turn from prime rib and mashed potatoes to lighter fare. A salad is an excellent meal on a sweltering day, and it can be as restrained—or lavish—as your tastebuds demand. And while it might be comforting to believe you’re tucking into a low-cal dish, don’t fool yourself. These salads, hearty and very flavorful, are not the slimming variety. (But, then, neither is prime rib!)
