1/3 cup granulated sugar 1/3 cup unsweetened cocoa powder 2 tablespoons cornstarch 1/4 teaspoon salt 2 cups whole milk 3 ounces finely chopped bittersweet or semisweet chocolate 11/2 teaspoons vanilla extract Mix sugar, cocoa powder, cornstarch and salt together, then sift into a medium-size bowl. Gradually whisk in 1 cup of the milk until the mixture is smooth, then whisk in the remaining milk. Pour the mixture through a fine-meshed sieve into a heavy-bottomed saucepan. Set the pan over medium heat and cook, whisking constantly, until the mixture thickens and comes to a boil, about 4–5 minutes. Continue to whisk and boil for 1 minute. Remove the pan from the heat and add the chocolate and vanilla. Let stand for five minutes, until the chocolate is melted. Stir gently just until the pudding is smooth. (Overstirring will result in a thin, loose pudding.) Divide the pudding among six small dessert dishes. Before serving, cool at room temperature for 20 minutes or refrigerate for at least 1 hour.
